What is Gluten? Gluten is a protein found in wheat, rye, and barley and is present in flour made from those grains.

For people who have Celiac Disease (estimated to be at least 3 million Americans), eating food containing gluten causes an autoimmune reaction and illness in multiple systems of the body.
